HOW TO MAKE CRISPY FRIED SILPANCHO STYLE STEAK
You know that scene in Ratatouille. Where the food critic has a flashback skipping in the fields as a child, reminiscing about his first time trying that good ole comfort food ? That is how we feel about this dish. It was our Dad's favorite dish growing up- minus the cute rats.
What you'll need:
1 lb thin sliced soft beef (can use chuck or flank)
2 cups breadcrumbs
Adobo mix (with cumin/garlic/pepper)
Mortar and Pestle
Normally, we like to pound out our meat and marinate uncovered in a fridge for 24 hours to ensure a solid crust and to maximize flavor. For this recipe, we are gonna show you a few hacks to cut that prep/cook time way down!
Microwave Hack for Potato -Use 2-3 yukon gold potatoes, place in a microwave safe bowl, cover with a damp towel and set on med high for about 3-4 min, or until a fork easily pierces skin of potato. We want to par cook these about 70-80 percent of the way and finish with a sear.
For the Rub
2-3 garlic cloves
Dash of neutral oil
Place garlic, whole peppercorns, and adobo seasoning into you mortar and pestle, and grind (scraping sides occasionally) until a pulp is formed, then add oil and continue grinding until paste is formed. Set Aside.
Flatten/Prepare that Meat
-On a cutting board, place one side of plastic wrap down and place your meat in the center. Oil both sides, and place another plastic wrap big enough to cover the meat and gentle press down on the plastic to adhere to the meat. With a mallet or meat tenderizer, flatten meat until about ¼ inch thickness even on all sides, making sure not to make holes in our meat, or have it break apart if it is tooooo thin!
-Smear your wet rub all over the beef, on both sides, season a little more with adobo seasoning and prepare to dunk in your mixed eggs and breadcrumbs to form a nice crust that will seal in all that flavor.
- Heat oil, and pan fry on both sides until nice crust is formed, about 3-5 minutes total. Remove and set aside.
- Now in that same oil, we will take our "hacked" potatos and give them a nice crust on each side, as they should already be cooked about 80% of the way (in the microwave). -Remove and fry up a sunny side egg.
-We had out tomato, jalapeno and onion salsa criolla leftover, so we decided to add some of that to our platter!
